Arugula

A peppery green, it is often used as part of a lettuce blend. Arugula is gets stronger in flavor as it matures. It's nice in sandwiches , soups, crostinis, lasagnas and other pasta dishes, pestos, pizza, vegetable sautes, and stirfry.
